Newbie with carb rebuild questions please?

Having just scored am 1982 CSR 650cc I have decided to delve into tearing down the bike this upcoming winter.
Luckily the electrical was well sorted out one afternoon and now on to the carbs.
Those accordion tubes can be ordered I assume?
Where is my pilot jet in the 2nd picture please? Is it the black tip next to my main jet? How does one remove that ?
