I'm sure I've got my problems narrowed down to my float valves. It seems like they're sticking and flooding her out instead of going out through the overflows, which is odd cuz the overflows aren't blocked or anything. She runs badly at idle, but 4000+ is fine, and after you turn off the gas valve (non vacuum) the problem goes away entirely and she regains all of her power. I've got float valves on the way, should I be cautious about riding my bike until they get here?

I would re check the float height first. If the overflow tubes are not leaking fuel out, the float may be too high for it to run properly, but not too high to flow out the over flow tubes (providing they are not obstructed).
I would check the floats before I put too many miles on the bike.
