Jetting, needle settings etc

I am working on a Z650 B1 ( for the second time- ignoramus overtaking a bus on a blind bend, you get the picture- and two new knees later) but this time I'm doing things a little different.
GSXR600 rear end and CBR929 front. The shock now sits where the air box use to reside.I am using pod filters and an as yet undecided 4 into 1 exhaust 
which leads me to seeking advice about jet sizes, needle heights etc. Basically any guidance as to setting up the standard carburetors and an unturned engine.

Keep everything stock except main jet plus one size and add air corrector jets.
so, 15 pilots and 105 mains with needle slot 4 from top and air correctors.
Ensure you use pods that dont have a lip that blocks the pilot circuit air intake.
