The timing advance works properly.
Have you checked it with a strobe or just manually moved the fly weights?
If with a strobe then it's not that causing the issue. 
If just manually be aware that if new springs have ever been fitted then they are possibly much stronger repop springs which are too strong to allow the fly weights to advance the ignition by centrifugal force. 
Ignition should show fully advanced at 3 - 3.5k rpm.

I checked it with my timing light :)

Zed replied, I'll put those air corrector guys in there and see if that makes it happy.

Alright, put the air correction jets from Zed in there, bike is still behaving the same way :(

Sounds kinda anemic on start-up. If it "can" hold an idle, are all pipes heating-up? To rule-out mechanical, have you performed a leak-down per cylinder? Are there any signs of fuel coming out the bowl overflows? Those air-corrector jets "richen" the mixture of course but you're either flooding the cylinders/no fuel available/valves andor cam timing, etc. Did you inquire with the gent who brought it to you what happened? Did it Ever Run correctly and if so what event led-up to the drastic change. Sounds like frustration is taking it's toll!! Every once in a while i run into a stumper too!
