First of all you need to get the carbs from that year bike, since those are a different style and kind of carbs. You need CV carbs. Why are you abandoning the fuel injection anyways?

Forget the last question. You need the carbs and carb holders for that year bike which I happen to have but I dont have extra parts. Check www.z1enterprises.com for those parts. You can go through 81 kz1000 k1 model which I have. I don't no much about the other models

You can use VM style carbs by plugging the holes on your cylinder head that are used for the FI stuff and mounting the correct carb holders. The mount bolt offset will not be the same for the carb holders and you will have to elongate the holes with a dremmel or file. You can use constant velocity carbs; either BS34 Mikuni or CV34 Keihin. Use the correct carb holders as the flange varies on these carbs and use the correct throttle cable. Your OEM airbox should work fine.
