Wondering if I’d run into any issues putting an 80 or 81 front fender on a 78?

You may want to provide model and engine size for your bike and similar info for the fender you are considering for swap.

For sure, list your motorcycle. putting in the signature is handy.
Some 70s KZ models use the same Fr fender as some models from the 80s.
The chrome one on my 81 650-CSR is the same as the KZ900 Ltd & KZ1000B Ltd & a quite few other models, mostly from the 80s.
But don't assume a fender will fit. verify beforehand.
