Starter Delete Question

Ok, I have a 78 KZ650 that I'm getting ready to turn into a cafe style bike. Now I just got this for free so I havent had a chance to ride it yet. I'm toying with deleting the starter. Can you guys provide me with any pro's or cons. How easily do these bikes start kicking them over.
I havent spent any real time looking this bike over, but if I do delete the starter, what mods do I need to do this?

The 650's are fairly easy to kick start.
About the only mods that I can think of is, fabbing up something to block off the opening in the crankcase where the starter originally installed. OR, you can just buy the one that APE race parts offers (bottom left in the pic below).
