You probably want to use MC-1 or MC-3 on carbs. We use the GP cleaner at work and it will discolor aluminum. I have used laundry soap to good effect in my personal cleaner. As for that Purple Power stuff, IIRC it has warnings about not using it for aluminum parts in the instructions. Simple Green has similar warnings. I can attest to the fact that Simple Green will discolor aluminum if it is allowed to sit on the parts.
Any cleaner used in an ultrasonic will be fairly dilute when properly mixed. The idea is to provide a surfactant to break up any oily layer that will float to the surface of the water. Keep in mind that your ultrasonic cleaner is a tuned system that is designed to work with a specific volume of water with a dilute cleaner, not 100% degreaser. More is not better in this case. Actually, you would be surprised how well they clean with just 100% water.

@ testarossa: would like to add that hotter isn't always better either.
I wanted/needed one, and asked around and a friend suggested getting one big enough for a cylinder head - V-8 cylinder head. Mine holds 7 gallons. They're touchy to the level of liquid - the heaters burn out quickly if the level isn't right - mine luckily had a lifetime warranty on the heater, and they fixed it and hand wrote a note with a sharpie that says - 'Check water level.'
I made a filter system for it using a common car oil filter Fram $3 each when on sale, remote oil filter locating system $14, some hose, and an inline 120v water pump $90. Hint: do the same thing on your parts washer, but you probably won't need the pump.
I always disassemble everything as much as possible - in most cases it is being rebuilt as it goes back together anyways.

Some really nasty carbs still have frozen slides/throttle valves, but the Ultrasonic makes for a cleaner starting point, and with a little soda blasting love, and other techniques they can be beautiful.
For other wash solutions, I have a collection of beakers and jars that I can put parts in - then sit in the basket - ultrasonics do their thing just as well, so if I want to use simple green, bourbon, or whatever, it makes for easy work.
They show up used from medical and dental places: just know what was through it before, and have a plan for disposing of the muck that you're going to generate.

I just boil mine in a tub of lemon juice, vinegar, Cool-aid, and water and they come out like new. Let them boil on low for about 45 minutes and then rinse with water. A large pot and kitchen stove will do the trick. If you use any other acids you will attack the aluminum. This is what we used in the military on aluminum parts.

Holy Sh1t thats a lot of carbs. Im going to have to pick up an ultrasonic cleaner. Those things are amazing.

Just to give everyone an update I installed the carbs this morning and they are working GREAT
I still need to install the airbox hoses which are never much fun but even with the open carbs the bike is running pretty well. I did have a minor issue with the kill switch but I got that sorted out. I rode it a couple of miles and down to the gas station and back. I would have done more but I got called into work a couple of hours early.
I can't be of much help on the solution used in the machine, I asked the service manager what it was and he said he didn't know he just buys a 10 gallon jug of stuff from the place that makes the machine.
