Ebay, Partzilla, cheap cycle parts and Z1 have all been good to me.

1980 KZ750 cam, ape springs, stock clutch/ Barnett springs.
Vance and Hines Header w/ comp baffle and Ape pods, Dyna S and green coils, copper wires.
29MM smooth bores W/ 17.5 pilots, 0-6s and 117.5 main
16/42 gearing X ring chain and alum rear JT sprocket.

I haven't tried them but, I've seen adverts in magizine for "Gasket King". They say they've 1000's of gaskets.
I don't have a plan and I'm sticken' to it! '77 KZ 650 / 750 GPz custom project in progress

If you value oil tightness I'd use OEM Kawasaki gaskets. Get the part number off Partzilla or similar, then hit ebay to look for a deal

Z1Enterprises.com carries oem parts, so search the oem part numbers.
Their prices are competitive, sometimes as good as or better than other places.
Since their recent change, they don't have everything categorized by model anymore, so you can't just search by model --- you have to search the number.
