winter project 75 kz400

Picked up this 75 in pieces but a very good start engine has been taken apart and cleaned. The frame has been painted also and started to be chopped.
Going to have a lot of questions as this goes on as I haven't owned one of these before. Have owned a 78 cb125s and a 75 cb350f so I'm not totally lost but those needed minimal work.
I have already posted about my forks but i am now wondering about the passenger foot peg supports i want to cut them off. Has anyone chopped these ? any tips would be great.
anyways heres some photos and thanks in advance.

currently it does not but it does look like it should factory odometer shows just 6000 miles and PO said it ran when he took it apart he was a heavy duty mechanic.

It ran perfectly when I parked it.
