Looking to learn all the tricks

My wife has been wanting a vintage bike for quite sometime, but now after all my boys and I have our own she finally pulled the trigger on one. We found a fixer upper 79 kz650sr and snagged it for 800, not sure now how good of a deal that was lol. I already knew the carbs needed serious attention as they were all in a bucket. But the rest of the bike looked decent, motor wasnt seized or anything major. Few missing parts here and there. Well once I finally got it up on the lift and pulled the tank and sides off the real issue arose. Someone truly destroyed the harness, and i mean not a single wire isn't hacked into and twisted into something else, it's amazing really. Im guess what happened is the ignition stopped working so they basically hot wired it in some way instead of buying a replacement some reason, and then just kept jumping wires as things failed. So I'm working on tracing the wires and getting some things straightened back out before I completely rebuild it from scratch. Im also missing many connectors, plugs, I mean you name it, if its electrical its been hacked. But it will be one cool bike, at some point lol
