OK, thanks for all the suggestions.
the spring that I have that came in the box with all the pieces seems to be the wrong one. It is too heavy, will not fit into the recess on the choke lever / bar.
Does any one know where I can find one ? I can't find anything here.
the numbers I have found on the carbs are 1314 st 11
thanks Richard

I found three different eBay ads with the spring you need.  Search "Kawasaki KZ750 carburetor" and then toggle USED.  You have to buy a couple other parts with the spring, but the spring is there.

One such listing is titled "Kawasaki KZ750 Carburetor RIGHT Outside Inside Choke Shaft #36 1983 UO AP-355", and there are at least two others.
