I'm going to lay my 1981 GPZ550 wiring harness out on my work table, then attach a battery to the battery connections, ground the harness to the metal table then test for continuity at all ends and etc.

Any suggestions?

A bad wire or connection can show good continuity.
You could have wire that has 500 strands in it and only one strand is connected with the other 499 cut---
and it will show continuity, but it can't pass much current.
So your test method won't tell you much on the condition of the harness.

Ideally, you would voltage drop test the harness.
Others will chime in on that but you could probably do it with a light bulb as a load.

Absolutely agree, without the circuit carrying it's normal load any testing will be next to pointless and send you down a rabbit hole looking for faults that are loom related
