Wow, 1500 degrees is really high... like propane torch hot.
Did he give you a calibration curve with them, or did you have to do your own heating and measuring?
FWIW, I found a fair amount of discussion about head temp versus oil temp on a Porsche air cooled FI site. Their conclusions seemed to be that oil changed too slow but that head temp changed too fast, so it was a bit of take your pick and pick your enrichment and IAC points accordingly.

I've got a KZ1000G Z1 Classic I'm want to put a megasquirt in, the original ECU died, so I'm a megasquirt newbie. I would like to keep as much original equipment as possible, injectors, airflow meter, throttle switch, temp sensor. I know I will need to adjust the fuel tables, but is there anywhere I might find an existing table to at least start from.

Keeping the airflow meter increases the difficulty, be a lot better to remove it and go hybrid Alpha N/speed Density. I think you will need to replace the throttle switch with a TPS also.
Shortcuts pretty well suck, you'd be a lot better off to follow the manual and make your own map.
