I've just completed the rebuild of a 1982 KZ750 motroe with stock carbs. I Totally cleaned them inside so they are working optimally.

I installed pods and will have a very open exhaust sysem. I am wondering how I should modify the jets, change the settings, and adjust them.

Any input will be appreciated.

Right now, it idles at 2700 with teh choke on and dies if I apply the throttle or let off the choke at all.

If they idle at 2700 rpm and won't come off choke, I suspect they may not be working optimally! What kind of carbs would these be? Keihin CV34 or BS34 Mikuni? Do you have the stock airbox on the bike and stock pipes?

If your carbs are Keihin CV34s then take a look at the picture below and the bike in my signature which is probably somewhat similar to yours. The pic may point you in the right direction. Stock version of my 135 jet is 125.
I have heard though that these jets can be hard to find.
