I have always used the stock pilot, 20. Thats a big enough pilot to begin with. I think I go up to the next size main, 117.5? Put several bike together with this combination and they drove great with no drivabilty problems what so ever. No blueing on those expensive pipes either!
On a side note. You may want to keep the bike original but I have found switching the stock advancer to a later 76/77/78 with less retard makes a world of difference with drivability. I have had people tell after I switched these the bike seems like brand new again. Just has better response.

IIRC, 1973-75 Z1's came with 112.5 main jets and the needle clips in the middle position, never messed with pilots.

They will run fine with stock jetting {20 pilot, 112.5 main, needle clip in middle}, its plenty rich for the engine. I had a brand new one in 73 and another I sold last year. One was in Florida, the other in Montana. They will even run with a 4-1 pipe Ok with stock jetting. I think 117.5 is way rich in my opinion
