If the performance was optimum during riding season, no back firing or exhaust popping, fall on it's face acceleration, lull from dead stop, carbon plugs, poor idling etc...
Whats to change regarding your jetting...
Throw some stabil in the gas tank, run it through the carbs for a little bit and store her away...

Is your 4-into-1 loud or close-to-stock quiet?
If it's a loud one, *and* you remove the rearmost plastic parts of the airbox (under the seat) up to but not including the air filter containing-box -- you're flowing a *bit* more air through the motor and might notice a little extra oomph going up one jet size on the pilot jet and one larger main jet.
But without any change to the stock airbox other than a K&N filter, *and* if the pipe is baffled enough so that it's quiet -- you're not flowing much more air through the motor and jetting changes *may* be unneeded.
If you just want to tinker over the winter -- pull and clean the carbs and go up 1 or 2 jet sizes as above and see what the plugs look like and how the bike responds, who knows -- maybe at your elevation the bike will tolerate being richened up a bit. The closer you are to sea level the denser the air is, and you can match that with bigger jets.
I sourced a bike out of Denver (the 'Mile High city') and even though the bike ran excellent at 5000 feet above sea level in Denver (not so much air up that high per cubic volume as at sea level) -- the carbs had to be made richer with bigger jets because I'm at sea level here in California.

Try the next size bigger on the mains(97.5 to 100),one size up on the pilot and raise the needle one groove or if there is just one use a small 4mm dia. washer.

the way the head pipes are angled it might be off of a cb 750 s.h.o.c motor from 69 to 78 but that's just a guess.
