im gonna be taking all the bodywork off the bike for the winter and having it all done and i was wondering do i just drain the carbs or what?

Yes -- drain the floatbowls.

If tank is staying with the bike, would also consider adding a shot of fuel stablizer and topping it off. If tank is drained instead, would swish some light oil around inside to inhibit rust.

Would air tires up to max psi (per tire mfgr spec.)

Change oil and filter.

Plus a drop of oil on everything that moves.

Remove battery, check and add distilled water if necessary, and place on tender.

If possible, keep bike inside closed garage, and cover it with something breathable (a bed sheet is okay) to keep the dust off. An outside open carport, porch or screened room, would call for a professional cover.
