The biggest thing I would be concerned with is if you can find bearings that will fit the wheel and axle you plan to use and make sure the tire is not too wide to fit between the forks.
so ive found an awesome deal on a set of 3 spoke aluminum wheels off a 96' GPZ 1100, should i bother with them?

When I swapped the Zx11C front rim into my police forks, I just went to the local bearing supplier with the old bearing and said I need the same bearing but with ??mm ID instead. They had what I needed in stock.

Hey there iroc. I am to building a drag bike on a budget. I found a 18x3.5 rim from a 54-72 (gulp) Harley Sporster for $40 at a local swap shop. It is Aluminum also. You can run a 5.5x18 slick on the rear with a custom swing arm with no problems. I am running a 19incher on the front for now. It runs mid to high 6's in the 8th mile,no whellie bars, foot shiftin! You can use almost any 40 spoke rim laced to disc brake KZ hub. Mine is a KZ750 hub. NO problems. And no bracing on the frame, but it is and 80 also. I would recommend using a later frame and restoring the 73. But,then again it's not my bike. Good luck and don't rush it! I need to post new pics,so don't go off the one in my profile.
