I haven't heard it but, normally an exhaust leak will be more noticeable during acceleration, whereas valve clatter doesn't change whether the RPMs are going up or down.

It sounds like an exhaust leak through headphones.
Cut up a 2' section of garden hose or similar.
Make sure it's clean. No bugs or water. You don't want bugs in your ear or water flashing to steam toward your eardum.
Put one end up to your ear and move the other end around the motor and try to locate the sound.

Did you remove the air suction reed valves in the cam cover? If you did, and did not plug up the exhaust holes beneath, exhaust will blow by the covers with the hose fittings.
