Is there a recommendation for an engine stand?
I watched an old school Kawasaki repair video-

Am I going to need to remove the transmission/ clutch to get to the crank?

I found the part number on partzilla, 92057, and checked eBay for the same part number. I found a few auctions selling that part number but it was listed for other models:
rover.ebay.com/rover/0/0/0?mpre=https%3A...2Fitm%2F132242337451

www.partzilla.com/catalog/kawasaki/motor...afts-chain-tensioner

Any thoughts on that eBay auction

Thats not the right part number for your chain 92057 is just the number for the diagram if you look at the part the part number is in red 21081-011 . Also if you click on the part like you were going to buy it then scroll down it will tell you what other models share that part .

looks like that chain isn't available at least not from partzilla .

I worked this weekend to get the motor out. The youtube video was helpful, I learned that you can not get that chain off the sprocket. No matter which way you move it. I ended up cutting it off, since I planned to replace it anyway. My back is killing from trying to move the engine out of the frame, second lesson learned.

My next steps are to mount the engine to an engine stand. Remove the head, then the oil pan. Depending on the damage, I will take it to a machine shop to have it cleaned and resurfaced

I am looking at replacing all the gaskets as I go. Do you guys have a kit that you can recommend?

I ended up getting the engine out of the frame. I didn't have the right tools to take off the drive chain, so I cut it off. There was no easy way to work it off the sprocket.

Since then I bought an automobile engineering stand. Has anyone been able to fit a motorcycle engine to fit into a standard engine stand?

Once the engine was out I took off the valve cover, starter and cam gears. It took me a while find the plugs that hide the additional 4 head nuts under the slugs. Once I was able to get the head off and inspect what's going on in the engine. The valves look decent and I don't see anything alarming on the Piston heads.
Take a look and let me know what you think.

Looks remarkably good for an engine that broke its cam chain. I was expecting some valve to piston impact marks at minimum. Humm...

There is no way to build a new motor for cheaper than you can pick up a used one. That being said, you never REALLY know the condition of a used motor until you get it in your shop and can test it. If you can find a good used engine I would go that route.

This weekend I am going to take the oil pan off and take a look at the otherside. Hopefully its in decent shape and it only needs the new chain. I will keep you guys posted once I get more info

Looks like valve guide seals. What do the bores look like.

The kz750 needs the valve cover installed to adjust the cam chain tension as there is a slider in the cover. It is possible to adjust the chain tension with the valve cover removed and then install the cover to over-tighten the cam chain causing failure.
