My first bike; found again!!!

Back in 2015 I sold my 76 750 twin to a redneck who wanted to turn it into an ice cream cart, to make room for my V-STROM 650. My best friend just found it in horrible shape and bought for a quarter of what I sold it for, and we have undertaken the task of restoring her to her amazing self and then some. We are making it a rugged terrain capable cafe racer to let her low end torque shine! I was almost brought to tears by seeing how bad she had gotten. Any hints or tips on replacements or things that should be upgraded would be greatly appreciated. I'll be posting pictures along the way. Our first big purchase will most likely be aftermarket carbs. Any suggestions?

This is where we are now and what we want to go for. We will be using some 82 750 parts that we found cheap and seeing what fits.

There is only one company making bolt on carbs for the twin. I forget the name at the moment but they're a Mikuni dealer out of Germany. IIRC they're VM 34 carbs but they are super exapensive because they are a legit rack with throttle/choke linkage. The other carbs I have seen people using are the individual vm34 carbs which are much cheaper. For some reason if you search "vm34" flat slide snowmobile carbs also pop up so make sure you get the round slide. They will require custom intake boots. Probably the easiest route is to get a set of the cv34 carbs and boots that came on the 82 and up bikes. Or if you wanna keep it funky run the original carbs.

If there was ever a bike needing to be saved... Good for you. The 750 twins make really cool café/tracker/scrambler bikes as long as you can ditch those horrendous side covers.

That is not a thing. The two schools of thought behind "rugged terrain capable" and "cafe racer" do not overlap: a genuine cafe racer will not work off-road, and a genuine off-road bike will not function as a cafe racer. At the very least there are significant compatibility issues in the areas of riding position, suspension, and tires.

These are the carbs. We bought a kit to rebuild it but I remember that a few of the bowl bolts stripped out on me.

I should have specified the two styles are overlapping and not the full capabilities. It will have longer suspension in the back and tighter in the front with the flat seat and thruxton type back end. It'll do 2 things decent but neither one really well.
