I thought that they did also have a FUEL adjustment on the bottom, but nothing there, not even pluged. Kind of lost here. So you can only adjust the idle fuel by changing the R15 idle jet and by playing around with the air side screw?

Only Suzuki GS 750/850/1000 Mikuni VM 26/28's have both air and fuel mix screws.
The KZ's 26/28's have either one or the other.
Average base line for your air screws is between 1 -1/4 to 1-3/4 turns out from lightly seated but given their age and possible wear they may be happier well above or below that.
The usual procedure is to start with them midway at 1-1/2 turns out and go from there.
