Just unbolt the sump, you can usually get away with re-using sump gaskets. Grinding-in the valves and cleaning the carbs won't cost much but if it is runnig real nice you can ask top dollar.
If you are trying to make some $$$ out of this, take plenty of good pics as you go along. In the classic car biz, a big history file plus loads of pics of, for example, a bare metal respray and new panels welded in etc etc adds value and removes the risk factor buying unknown. The same applies to bikes, a top end rebuild done well with receipts and pics will add value.
The 750 twins were not a big seller for kawasaki in the day, they were trying to tap into the xs650 twin and Truimph Bonnerville market, just it wasn't a big seller; the four cylinder kawasaki bikes had really overshadowed the twins. Hence the importance of getting this running really nice of you want to make some dollar. Good luck.

Shave it off carefully with a razor blade, solvent will help on the stuck on bits.

I just got the motor assembled and into the bike I have a few more things to button up. Was curious on how I should break the rings in. I hear you warm in up by rev 2k-5k bursts. Then once warm do about ten pulls from 30-50 mph. What do you guys think

Please don't rev it like that. Ride it like you would normally but not over 4/5000 RPM the first 500 miles. Use the power, keep changing the RPM's and use the engine while braking. The rings should seat right away. Re-tighten after warm up. Change the oil after 500 miles and ride the piss out of it. :woohoo:

Don't use synthetic oil during the break in process either is one I've heard.

I got the motor running but when I took it for a spin I got about thirty feet and it started sputtering didn't even get out of first gear any ideas. Trying to load a video as well
