Can't believe I'm gonna say this as I'm one of the biggest fans of a header, pods and stripping off the turn signals, center stand, pass bar etc to save weight and clean it up but..... I wouldn't touch it either.
1978 KZ650 b-2
700cc Wiseco kit 10 to 1.
1980 KZ750 cam, ape springs, stock clutch/ Barnett springs.
Vance and Hines Header w/ comp baffle and Ape pods, Dyna S and green coils, copper wires.
29MM smooth bores W/ 17.5 pilots, 0-6s and 117.5 main
16/42 gearing X ring chain and alum rear JT sprocket.

Seems like the horse is out of the barn since the Kerker has been purchased by the boy. My suggestion beyond this point is to keep the airbox unless you enjoy tinkering with jetting; pods upsets the carb jetting needs way more than a header does. And if you go with pods regardless the real deal K&N brand are superior to the generic look-alikes on the market.

While the carbs are off is a good time to replace the rubber boots attached to the head. It's critical that these parts seal well and 40 year old rubber tends to be unreliable.
