I'm thinking possibly of painting my tank but I'm not sure what spray paints and clear coats are gas proof. I'm only planning on using spray paints.

Catalyzed urethane is about as good as it gets. Use a good two part epoxy primer underneath. You can't leave gas sitting against it indefinitely but it will easily survive common spills, even if they occur semi regularly.

Agree with catalized urethane clear coat, commonly known as 2 part or 2k. Cellulose paint can be used under this but be aware that this 2K stuff is TOXIC. Masks can be bought for around £15.

SprayMax 2k clear is a urethane that comes in a special 2-part can. It's pricy but worth the cost.
As mentioned, you have to wear the proper NIOSH safety gear.
Shake the can, actuate a button to break the seal, shake again to mix the 2 parts, then spray.
I think you have about 24-48 hours to use the product after activating it, depending upon the ambient temperature.
48 hrs is probably a stretch.

Just to be clear, when using two part urethane paints the "proper" safety gear is a full body suit to keep overspray off the skin and a fresh air supply respirator system. Not simply a charcoal spray mask. Mind you this is overkill for guys spraying a motorcycle outside on a patio but just saying.

Yes, its very hard when cured though. Best to sand around 24 hours after application (depending on ambient temperature) Wet sand with 2500 grit then polish with Farecla G10 compound.
